Crust:
- 1 cup flour
- 1/2 tsp salt
- 1/4 cup oil
- 1/4 cup refrigerator-cold water
Mix all ingredients, press into greased pie tin.
Filling:
- 2 garlic cloves
- 1 cup chopped mushrooms
- Whatever onion or potato or spinach or whatever you want
- 1 block of drained firm tofu (silken or regular works)
- 2 tbsp almond milk or mayonnaise or yogurt
- 2 tbsp nutritional yeast
- 1/4 tsp onion powder
- 1/4 tsp turmeric
- 3/4 tsp salt
- 1/3 cup chopped sun dried tomatoes.
Preheat the oven to 375F.
Sauté the garlic, mushrooms and any other ingredients that make sense to sauté for 3-4 minutes.
Blend everything else (or if the tofu is silken you can just mix it).
Mix those things together, and put them in the crust.
Bake for about 30 minutes.
Cool for 10-15 minutes before serving.
